- Preheat the oven to 475 degrees.
- Generously grease a sheet pan with olive oil. You want enough room so the potatoes can lay on the sheet pan without touching; use 2 if necessary.
- Cut the potatoes into 1/2 inch thick strips. Place in a large mixing bowl. Drizzle with olive oil and season with Parmesan cheese, paprika and salt. Scatter the potatoes on the prepared sheet pan(s), ensuring that they do not touch each other.
- Place the potatoes in the preheated oven and bake until crispy and golden brown, about 10-15 minutes. Flip after [6 minutes] to ensure even cooking.
- Prepare a plate with layers of paper towels for the cooked potatoes. Once potatoes are out of the oven, transfer them to this plate and season with salt.
- Transfer the Parmesan potatoes to a serving dish or dinner plates. Serve warm!
