- Admittedly, this recipe is a bit more laborious than cooking standard bacon. It doesn’t take longer, but it requires a little more active cooking attention. It’s worth it though for that crispy, sweet crunch!
Discard any leftover syrup used for basting. Do not reuse it, since it came in contact with the raw bacon.
- Add fresh fruit or a sprinkle of powdered sugar for a little extra flare.
Recipe for 4 people makes about 12 pancakes.
- This recipe is very flexible. Use any berries you prefer, add more yogurt if you like, and amp up the cinnamon if you can’t get enough! Really, it’s up to you.

Prep Steps
- [ Cinnamon and Honey Berries with Greek Yogurt ] Cut the stem ends off the strawberries and cut into bite-size pieces to measure the indicated amount. Place in a large mixing bowl.
- [ Cinnamon and Honey Berries with Greek Yogurt ] Add the blueberries and raspberries to the bowl of strawberries.
- [ Cinnamon and Honey Berries with Greek Yogurt ] Drizzle the honey and sprinkle the cinnamon over the fruit and toss to combine. Place in the refrigerator until ready to serve.
Cook Steps
- [ Maple Syrup Bacon Strips ] Preheat the oven to 400 degrees.
- [ Maple Syrup Bacon Strips ] Measure the maple syrup into a small bowl.
- [ Maple Syrup Bacon Strips ] Lay the bacon strips out on the sheet pans. Use more than one sheet pan so the strips do not overlap each other.
- [ Maple Syrup Bacon Strips ] Use a small spoon or a pastry brush to spread the syrup evenly over each bacon strip. Only coat the top side.
- [ Oatmeal Pancakes ] In a large bowl, sift or whisk together the flour, sugar, salt and baking powder. Whisk in the oats.
- [ Oatmeal Pancakes ] In a medium bowl, whisk together the egg, whole milk and vanilla. Pour into the flour mixture and gently stir until combined.
- [ Maple Syrup Bacon Strips ] Wad up a bunch of paper towels and place them in a medium, heat-proof bowl.
- [ Maple Syrup Bacon Strips ] Place the bacon in the preheated oven. Bake for [7 minutes]. Then, if a lot of grease has accumulated, carefully drain the grease into the paper towels in the heat-proof bowl. Brush more syrup on top, flip each strip, then glaze the other side. Bake for another 5 minutes, glaze the top side again, then finish cooking for 3-5 minutes until the strips are well browned. Strips will not feel crispy, but they will crisp up out of the oven.
- [ Oatmeal Pancakes ] Heat a medium saute pan over medium heat. Add butter and melt.
- [ Oatmeal Pancakes ] Make each pancake using about 2 tablespoons of batter. Work in batches so as not to crowd the pan, leaving enough room to flip each cake. Let the batter cook until you see tiny bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on both sides, another 2-3 minutes. Transfer to a clean plate.
- [ Oatmeal Pancakes ] Let pan cool slightly in between batches, and add more butter as necessary. Repeat until all the batter is used. Keep cooked pancakes warm under foil or in a 200 degree oven, if desired.
- [ Maple Syrup Bacon Strips ] Once you take the bacon out of the oven, transfer it to a clean platter. Do not overlap the slices, and do not place them on paper towels. They will be sticky. Allow the strips to cool slightly. They will crisp up as they cool.
- [ Cinnamon and Honey Berries with Greek Yogurt ] Transfer the berries with cinnamon and honey to a serving dish or plates. Serve the Greek yogurt on the side, or top each portion of fruit with 2 tablespoons of yogurt. Ready to eat!
- [ Oatmeal Pancakes ] Transfer the oatmeal pancakes to plates or a serving platter. Serve warm with maple syrup on the side, if desired.
- [ Maple Syrup Bacon Strips ] Transfer 3 pieces of bacon to each breakfast plate and serve!
