This potato side dish is extremely simple yet bursting with flavor.
Feel free to substitute any fresh herb for the chive if you have something else on hand. Cilantro, dill or basil would all be delicious!
Ingredients
- Baby Potatoes
1 1/2 Pounds - Fresh Chives
3 Tablespoons - Butter, Unsalted
3 Tablespoons - Black Pepper
- Kosher Salt

- 1 Microwave-Safe Bowl, Small
- 1 Pot, Large (4-6 QT)
Prep Steps
- Cut potatoes in half. Place in a large pot. Fill the pot with cold water to cover the potatoes by about 1 inch.
- Finely chop chives to measure the indicated amount.
Cook Steps
- Place the pot of potatoes over high heat. Proceed with next step as water comes to a boil.
- Once water is boiling, cook the potatoes until they pierce easily with a fork, but do not fall apart, about 6-8 minutes.
- Place butter in a small microwave-safe bowl. Microwave on high in short 20-second increments until butter is melted.
- Place the strained potatoes back in the pot.
- Stir the chopped chives into the melted butter and drizzle over the potatoes. Season with salt and pepper to taste, and toss to combine all ingredients.
- Transfer the potatoes to a serving bowl or dinner plates. Serve warm!
