Well, whaddya know! It’s National Dairy Month! Considering how much I love cheese, I am totally on board with that. Especially for Meatless Monday since we have all kinds of cheesy, meat-free recipes and meals to celebrate with. I know when I went vegetarian for awhile, cheese was an easy, go-to ingredient that helped me feel full and satisfied so I never missed the meat.
Let’s face it. Cheese can pretty much anchor any meal. Crumbled in salads, grated over pasta, melted over pizza or in hearty casseroles, added to breadcrumb coatings, baked in flaky puff pastry, mixed into thickened sauces, or simply served as an elegant party appetizer or on a cracker, cheese is pretty much unstoppable.
That’s why this month, we are unashamedly celebrating Cheese and we need your help! Starting June 9th, we want you to send in your best and most beloved original recipes that highlight cheese as a main ingredient. We will be selecting three finalists to have their recipes included on Cooking Planit. How cool is that!? Your recipe could be published for people all over the world to make and enjoy. Pretty awesome, eh?
So, get those recipes ready. You don’t need to submit a photo, but if you want to, we’d love to see it. Stay tuned for more details on how to enter the official Cooking Planit “Formaggio Cheese Challenge” and follow along with #FormaggioChallenge. We have all kinds of fun stuff planned between now and June 9th to gear up and get excited with the help of some friendly food bloggers as well.

Isn’t spring lovely? The sun comes out, the air warms up and nature starts to come alive again. Not to mention, we shed our layers of wool clothing, stash those winter coats deep in some closet and dust off the flip flops and tank tops. It’s a beautiful time of year, is it not?
Eating lighter seems to follow trend as well, now that we aren’t trying to pack on the pounds to protect us from the harsh cold winter. In fact, going Meatless on Monday’s might even make more sense to you now. Leaving the meat out of your meal plan for just one day a week can thin your waistline, lessen your impact on the environment and improve your overall health. With all the spring and summer produce that’s sprouting up in gardens across America as I type, it also happens to be the easiest time of year to forget the meat. You’ll be too busy celebrating the bounty of the season from now through December, to realize you didn’t eat any meat on Monday.
Not sure how to make a great tasting meal without the meat? Well, we’ve got plenty of ideas for you to get started. This particular meal is perfect for springtime, with fresh asparagus and tangy artichoke pasta. A balanced and satisfying meat-free dinner can be ready in nearly 35 minutes!
